Fitou Appellation d’Origine Protégée AOP
Taken from the coastal Corbières terroir, grown on hillsides with a mix of pink schist and limestone. The wine was produced in the traditional way, pumping over alternating with punching down and a long vatting period of more than 3 weeks. After fermentation, a third of the batch was matured in wooden barrels on fine lees from several wines. Bottled on August, 2015.
An elegant yet easy-drinking wine for all occasions, it pairs perfectly with fall dishes: grilled meat, game, and stews.
Our vines on schist: Grenache, Carignan, and Syrah, creating fruity wines with a strong character that reveals their origin.
Intense on the nose, with aromas of fresh fruit and spices as well as chocolate and even sanguine notes.
Our wine-making process respects the grapes and the terroir to produce a very enjoyable wine.
An easy-drinking, structured wine without sulfur for a natural flavor. Superb mouth feel with supple and soft tannins and touches of blackberry and licorice.
